So, I love Mexican food. Love love love it. I love the fresh, bold, vibrant flavours, and I love how fun it is! Think about it- when was the last time you had Mexican and there wasn't a whole lot of laughter, chatter, and activity? Can't remember? Me neither. I think it's all the sharing, passing of plates and general inability to eat it without making a mess. Just brilliant. I've already posted two Mexican inspired dishes (I'm not really sure you could call my Quesadilla Pie authentic!), but I already have a third on its way. Is that overkill? Sorry if so, I'll try and keep it more varied in future.
Anyway. It's impossible to serve Mexican without salsa. But I hate shop bought salsa. It's always too watery, too raw (I hate big chunks of raw tomato), too spicy, too bland (how this is possible is beyond me!) or too overwhelmingly tomatoey (I know, I know... I sound pretty fussy!). Thing is though, when it's so easy to make a zingy, vibrant, bold, fresh, spicy yet balanced salsa at home... who needs shop bought?! Oh, and did I mention it only takes 5 minutes?! It's super fast, super tasty, super easy and super cheap.... quite frankly, it's a super salsa!
Super Salsa
Ingredients
390g chopped tomatoes with chillies (available at most supermarkets)1/4 small onion, chopped
1/2 clove garlic, crushed
1/2 green chilli, deseeded and chopped
1 tspn honey
1/4 tspn salt
1/8 tspn ground cumin
Small bunch of fresh coriander
Juice of 1 lime
Directions
I'm not going to number these directions because there really is only one step... pop it all in a blender and blitz until it has reached your preferred consistency!
Will keep in the fridge in an airtight container for 1 week.
